Spring is in full swing here at The Settlers Inn. The flowers of our delightful dogwood tree provide a wonderful wash of white against a bluestone backdrop. Deeper into our garden the ornamental crabapple, a visual treat in every season, spreads the joy of its blossoms. And, of course, our signature crop of colorful tulips signals a hearty welcome.

Our Chestnut Tavern offers an excellent new menu with dishes like cream of asparagus soup with white truffle oil, or braised organic breast of veal on roasted garlic polenta cake and a fine herbs sauce. Have a round while you’re with us. Among our new artisan beers are the very smooth and drinkable Belgian Grunt Amber and Smutty Nose Star Island Single, from Portsmouth NH.

Make Her Mother's Day Memorable
Sophia Loren once said, "A mother always has to think twice, once for herself and once for her child." Sunday, May 10 is your chance to change it up, by thinking of — and thanking — Mom. It's Mother's Day!

Celebrate with brunch or dinner at The Inn, or select a special treat from our new spring offerings at The Potting Shed in the garden. New merchandise includes handcrafted jewelry and an intriguing new fragrance, Kimono Rose, by Thymes.

Brunch will be served a la carte from 11:30 AM - 2:30 PM. Highlights include an organic spring greens salad with soy-mandarin orange vinaigrette; chilled cucumber and champagne gazpacho; strawberry and brioche sandwiches with cream cheese and arugula; duo of fettuccines tossed with fava beans and truffle oil, sundried tomato julienne with shaved parmesan; and Pennsylvania maple glazed Liedy's Farm ham with mashed potatoes and warm fruit compote.

Dinner is available from 3 - 8 PM and will feature Liberty Gardens butter lettuce with creamy red onion vinaigrette; cream of asparagus soup with baby asparagus tips and hollandaise; house smoked Blooming Grove trout; roast sirloin of beef with sherry Dijon sauce.

Local Flair Magazine's Restaurant Week
The Settlers Inn is participating in Local Flair Magazine's Pocono Mountain restaurant week until May 2. We are offering a five-course farm-to-table tasting menu from 5 to 8 PM each day with a prix fixe cost of $45. Chef to Celebrities
If you've ever wondered who prepares The Inn's handcrafted dishes, wonder no more. Our Executive Chef and Proprietor Grant Genzlinger is assisted by Chef De Cuisine Ben Sutter, who recently celebrated his second anniversary with The Settlers.

Ben has cooked for celebrities like Al Gore, Larry King and Kareem Abdul Jabar while working in Hollywood, but credits The Inn's partnerships with local farmers and growers with taking his craft to a different level. "I absolutely love working with the smaller producers that we are blessed to have contact with here at The Inn," says Ben.

Before his tenure at The Settlers, Ben worked under other great chefs like Matt Sramek from Saffron's in Riverside, Tony Tammaro from the Palm, and Juan Guiterrez from the Sycamore Inn. He interned at the famed Bel Air Hotel, and the exclusive "Loft" in the Montage Laguna Beach. He apprenticed under Chef Scott Brouse from the Inn at New Berlin.

Ben recently completed the 1st level of the Professional Chef accreditation at the Culinary Institute of America and is looking forward to completing the entire series.
