Try a Quiet Water Paddle
As summer winds down and Labor Day weekend lies just around the corner there is no better time to sneak in a trip to The Settlers Inn for some outdoor adventure. Many of our guests enjoy canoeing and kayaking on the nearby Lackawaxen or Delaware rivers, which is always refreshing. But there’s nothing more peaceful than a quiet water paddle on one of the many beautiful and scenic Pocono Mountain lakes or ponds.

Only a few minutes from The Inn you’ll find Promised Land State Park, Peck’s Pond and Shohola Falls Lake to name a few. Settlers Proprietor Jeanne Genzlinger also recommends the shoreline of Lake Wallenpaupack as an excellent weekday flat water paddle. “Quiet water excursions are great exercise,” says Jeanne.

Birders and nature photographers—or anyone who enjoys being outdoors in a gorgeous setting—will marvel at the diverse species and spectacular surrounds to be seen when paddling on quiet water, from mature bald eagles that make our region their year-round residence to the impressive great blue heron hunting near the water’s edge.

Music on the Terrace
Escape your weekday doldrums with a delicious dinner on The Settlers Inn terrace while enjoying our popular Wednesday evening “Food, Fun and All That Jazz” series, from 6 to 9 PM, rain or shine. Join us on August 13 for the bluesy sounds of the female duo Rapture. Or, stop by on August 20 for the series’ grand finale featuring Big Bang Jazz Gang, a 10-piece ensemble performing “The Music of Miles, Mingus & Monk.”

Magnificent Mediterranean
Set sail to The Inn’s Mediterranean wine and food pairing on Friday, PicAugust 15. Acclaimed Guest Chef Alan Kehoe will join our own Executive Chef Grant Genzlinger and Chef de Cuisine Ben Sutter for an evening of delightful fare and fine vintages selected by Sommelier Claude Briere (whose expertise helped The Inn to win its seventh consecutive Wine Spectator magazine Award of Excellence!).

Menu highlights include chilled Lebanese cucumber cumin, Lebanese cantaloupe salad with cardamom, shashlick Lebanese lamb kabobs, Albanian chicken comlek, Turkish eggplant with tomatoes, and Algerian lavender cous cous pudding.

Cost for our Mediterranean wine and food pairing is $100 per person, plus tax and gratuities. Gathering time is 7PM. Dinner begins at 7:30. Call 800-833-8527 for reservations.

Meet Us at MMMMMacy’s
Settlers Inn Proprietor and Executive Chef Grant Genzlinger will bring a taste of the Pocono Mountains to Manhattan on Tuesday, August 19 when he is the guest chef in Macy’s The Cellar Kitchen. Grant will cook up The Inn’s zucchini and lavender soup, fresh and smoked trout mousse, and black peppercorn crusted venison medallions with Paupack blueberry sage sauce. Here, Grant shares his scrumptious soup recipe…


  • 5 onions, peel and rough chop
  • 2 carrots, peel and rough chop
  • 1 head of celery, rough chop
  • 8 large zucchini, rough chop
  • 3 quarts of cream
  • 6 quarts of vegetable stock
  • 1 handful of fresh washed baby spinach
  • Salt and pepper to taste


  • In large soup pot sweat onions, celery and carrots
  • Add zucchini, season
  • Add cream and vegetable stock, season
  • Simmer until zucchini is tender
  • Blend with spinach for color
  • Strain
  • Season
  • Sprinkle with lavender to order

“It’s delicious finished with a dollop of crème fraîche!” says Grant.
