Spring is a time of celebration and relaxation at The Settlers Inn. Our 4,000 lovingly-tended tulips are lending their luscious wash of texture and color to the Inn’s exquisitely landscaped gardens, Mother’s Day is just around the corner, and The Inn’s sommelier Claude Briere has returned from his winter travels with many new and interesting wine selections.

Green is the Real Thing
Our gardens are only one great example of what’s “green” at The Settler’s Inn. In early April, The Settlers was named to the Pocono Business Journal’s Green List, for our 30-year tradition of farm-to-table dining and sustainable hospitality practices.

The Inn’s authenticity and eco-stewardship also garnered worldwide recognition on April’s National Geographic Traveler first-ever annual Stay List, which recognized 150 location-inspired hotels in the United States, Canada, Mexico and the Caribbean. As NG Traveler reports, “SENSE OF PLACE: With the cadence of a lullaby, these three words neatly sum up the properties celebrated here. To travel well, we believe, is to soak up authenticity.”

Thanks Mom

Moms deserve to be pampered and applauded every day of the year, but Mother’s Day offers a special opportunity to say thank you to Mom for everything she does all year long. Why not treat your Mom to our delicious Mother’s Day brunch or dinner?

Brunch will be served from 11:30 AM - 2:30 PM and will feature pea shoots and arugula salad with sweet shallot vinaigrette; chilled cucumber and champagne gazpacho; salmon tartare with lemon crème fraiche; Beach Lake apricot and cream cheese stuffed French toast; and Pennsylvania maple glazed smoked alderfer ham with mashed potatoes and warm fruit compote. Dinner will be served from 3:00 - 8:00 PM and will feature prime rib of beef with a baked potato and wild mushroom and spring vegetable sauté; roast loin of pork with Gorzynski organic rhubarb ginger chutney, brown basmati rice and haricot verte; handmade lobster raviolis with fava beans in cognac brown butter; or pan seared Atlantic salmon in sorrel butter sauce with four colored lentils and broccolini.

Catch of the Day
Let’s not forget about our Dads! Pennsylvania’s trout season opened in early April, and the Lackawaxen River behind The Inn is stocked with some prize-winning lunkers. Our angling guests will want to pack up their tackle and head out back for a go at these trophy trout. Or, spend the day driving along the scenic Lackawaxen River and stop by the home of expert angler and author Zane Grey.
