Spring is in the air once again – the tulips are blooming and The Settlers Inn kitchen staff is bubbling with excitement. Local farmers are harvesting some of the tastiest produce of the year – and Chef Peter’s menus are evolving to make the most of it. When the first batch of ramps (a cross between a shallot, green onion and garlic that grows wild) and fiddlehead ferns come to fruition it signals that the season finally is here. The local purveyors come to our door with unique and fresh ingredients that are just not accessible to the average restaurant. As always, the goal of our rustic country inn is to utilize as much farm-to-table ingredients, organic produce and naturally raised food as possible. Edible flowers and Asian greens, such as Tatsoi, Baby Bok Choy and Mizuna, soon will appear on our menus – as will as pasture-raised chicken from Fork’s and Gordon’s farms and Brook Trout from Blooming Grove. Come visit and dine with us this spring and share in this marvelous bounty.
