Spring has sprung in the Delaware Highlands — the country back roads are blossoming with flowers and the rolling hills are brilliantly verdant. The Settlers Inn new Executive Chef, Peter J. Durand

New Chef...
We’re thrilled to introduce our superb new Executive Chef, Peter J. Durand. With skills honed over 20 years in the kitchen, Peter’s credentials will impress you almost as much as his mouthwatering creations. He holds seven certificates from the Culinary Institute of America and was most recently Executive Chef at the View Restaurant in the New York Marriott Marquis — the only revolving Restaurant in New York City. An avid gardener and deep sea fisherman, Chef Pete frequently meanders the waters of his native south shore Long Island, and is in the process of writing a regional chef book — Lost at Sea and American Chef Tales.

Come enjoy the many facets of the Settlers Inn dining experience – fine dining in our restaurant, casual light fare at the bar, or a little bit of both on our outdoor terrace overlooking the Lackawaxen River. Savor fresh local ingredients and classic country items (with a culinary kick!) from our new spring lunch and dinner menus. Chef Pete is busy dreaming up marvelous meals featuring rare heirloom tomatoes and herbs from our garden. His imaginative and original entrees of wild game, poultry, and seafood will tantilize your tastebuds, so don’t miss out on this spring cuisine.

Spring Specials for Two (available through June 31)

Spring Fling ($315). Includes one night’s accommodations, a bottle of Pennsylvania’s own Chaddsford Spring Wine (fruity, light, and effervescent), a bouquet of spring flowers, dinner for two in the dining room, and breakfast.

Waterfall Tour ($290). Includes one night’s accommodations, a guide to five waterfall sites, a backpack with packed lunch, use of the inn’s walking sticks, dinner for two in the dining room, and breakfast.

Town and Country Package ($510). Includes one night’s accommodations with dinner for two at Settlers Inn and one night’s accommodations at our sister property, the Sayre Mansion in Bethlehem, PA. Jazz on the Terrace
Catch the rhythm on our garden-view deck this summer with jazz grooves every Wednesday night in July and August. See artists such as NYC favs Anat Fort Trio and David Epstein Trio, and local favorite Gary Rixner. Special Sunday night performances will be held Memorial Day and Labor Day weekends. New Guest Room
Check out (and then check into) the results of our winter project – a beautiful new guestroom. We combined two smaller rooms to create one large room that features a king bed, fireplace, and whirlpool tub for two.
